Enchilada Sauce

 

To make the enchilada sauce combine all ingredients in a saucepan and cook,

 stirring constantly, until the mixture boils and thickens, about 7 minutes.

I found it best to toss the onion, garlic, and fresh oregano into a food processor instead of dicing by hand.

 

 1 cup chopped onion

 2 cloves garlic (chopped)

 1 Tbsp. olive oil.

 1 cups tomato sauce

 1/2 - 1 cup chicken broth

 1 Tbsp. chili powder

 1 tsp. salt

 1 tsp cumin

 1 tsp. oregano

 1/8 tsp. pepper

 a little sugar

 a little lime juice

 I used a dash or two of cinnamon too

 a couple dashes of thyme
