From Lokesh (Lokeswara Anantula's wife)

2 bunches of Mint leaves - peel the leaves and wash them thoroughly and keep aside

7 green chillies

Lime Juice - 4 tbl spoons

salt to taste

1 large potato boiled and cut into pieces

4 cups of cooked basmathi rice - Add little bit of oil while 
		cooking the rice so that the rice doesn't stick.

1/2 tbs spoon of garam masala

Oil 

Add 3 tbl spoons of oil in a container and fry the chillies and mint for 
at least half hour in medium heat. 
Add the fried mint, chillies, lime juice, salt, garam masala and a
little bit of water and grind all the ingredients in a food processor/grinder. 
 
Add 2/3 tbl spoons of oil in a container and fry the potatoes for 2 mins. 
Add mint paste to the fried potatoes and fry for another 3 minutes. 
Mix this mint paste thoroughly in the cooked rice and the mint rice is good to go.

serve with raita to put on it!
