zuchini - circle cut (small zuch's, yielding small circles)
green onions cut in 1/2 - 3/4 inch chunks
white wine vinegar
Salt
Mint  

olive oil in a hot pan (3 T), add Zuchs and then green onions.  
When zuchinis start to caramelize, add some white wine vinegar.  
Add mint after that.
Dump contents of pan into a big bowl and drizzle with more olive oil.

I saw it on lidias italy show..  tried it and liked it.
