CHILI CON QUESO DIP

 

   Amount  Measure       Ingredient -- Preparation Method

    1/4     C          Half & Half

    1       t            Cumin   (add more if you like...)

    4       oz          Chopped green chilies

    1       c            fresh diced tomatoes (or Canned)

    1/2     c          Chopped onion

    2                   diced scallions, including some green

    1/2     lb          Shredded jack cheese or cheddar (or mixed)

                         (Have also used some velveta)

    1       t            Minced garlic  (carefull, not too much)                    

    3       oz         Cream cheese

    1/4     t           Pepper or white pepper

    1       T          Chopped cilantro

                                     

  OPTIONAL   :           diced green pepper, or jalopeno

 

   Heat all cheeses and cream over low heat, stirring constantly, until the cheese  is melted .  Add the rest of the ingrediants, saving the tomatoes, cilantro, and scallions for last. Don't let it heat for more than 2 minutes after you've added those last 3... Serve with tortilla chips. Makes 2-1/2 cups, give or take...

 

(-Go easy on the garlic, you can destroy the flavor of the queso by using too much)
