White Chili

2 T olive oil
3 Shallots chopped
14.5 oz tomatoes (not drained)
7 oz can of green chilies
1/2 t corriander powder
3 cloves garlic
Juice of 1 lime
1 lb diced chicken breasts
18 oz can tomatillos, drained and cut up
10.5 oz can chicken broth
1/2 t oregano
1/4 t cumin
2 15oz cans of white cannelloni beans
S & P to taste

sautee the chicken in oil; set aside to cool and cut up.  

Add the shallots and garlic to the pan and saute.  
Stir in tomatillos, tomato (with juice), chicken broth, 
green chilis, oregano, corriander, and cumin.

Boil and simmer 20 minutes

return chicken (cut up), with drained beans and 
cook 5 more minutes.  Add lime juice, Salt and pepper.

Serve with Red onion, sour cream, cilantro, jalapenos,  
tomato, avocado, shredded jack cheese, & lime wedges...

I have noted that if you follow the amounts, it feeds  
7 people only -with no leftover's and nobody got 2nds ;)
